This easy chicken recipe is called Pollo alla cacciatora in Italian. It is traditional from the Toscana and all north of Italy.

Ingredients for this easy chicken recipe
1 chicken
1 large onion
3 to 4 tablespoons olive oil or butter
Flour
Salt
A pinch black pepper
1 pound tomatoes
6 sweet green peppers

Finely chop the onion and keep it for more than half an hour in water at room temperature, remove it from the water and dry it. Add the olive oil to a skilled and when the it is hot add the chopped onion. Cook for a few minutes it on low heat, remove from heat and set aside.
Cut up the chicken, sprinkle the pieces with some flour, and season with salt and pepper. Saute the chicken in the same olive oil which remains in the frying pan. Add one tablespoon of olive oil if necessary. Brown the chicken pieces for about 10 minutes on all sites. Note that some home cooks don’t add any flour to brown the chicken. You can try both vesions and see which one you like best.
Peel and chop the tomatoes and when the chicken is brown add them to the chicken. Add half six chopped sweet green peppers and put back the onion.
Once the sauce has thickened add a little hot water to prevent the vegetables from burning.
Cover the pan and simmer until the chicken pieces are tender. You will need from 30 to 45 minutes depending on your type of chicken.
